All of these recipes came from the Pioneer Woman's recipe website Tasty Kitchen. I have heard rave reviews about her and her cooking but I had never really ventured over there to explore and try out her website until yesterday. I will have to admit I will be using her again and again in the future. The food is wonderful and easy to make! The only thing is that I feel like I have been in my kitchen all day! Its not such a bad thing just something I will have to get used to.

Happy New Years everyone!! Today in an effort to start the new year out on a good foot I managed to cook all three of our meals today!! I know it sounds weird, I cooked all three meals? Well instead of the kids usual oatmeal or cereal for breakfast I cooked a quiche a Boudin and Green Pepper Quiche, well minus the boudin. Our commissary does not carry boudin so I opted for a beer brats sausage. It was a total success! Normally I do not like quiches because I am really weird about how my eggs are cooked. I cannot stand cooked yoke, but this I loved!! The only person how didn't like it was Colin, but that is normal around this house. He doesn't like half of what I cook. He is our resident picky eater. For lunch instead of sandwich meat or corn dogs I made Mini Meatball Sandwiches, and instead of buying the meatballs I made them! I had never made meatballs before, but they were super easy and fun to do. For dinner we are having a typical holiday dinner for our house, just will a New Years twist, you cannot have New Years dinner without black eyed peas for good luck! In about an hour we will be eating, New Year's Black-Eyed Peas, slightly updated, ham, baked potatoes, and corn bread. Hopefully they turn out great, I know they smell good! The only thing that would make dinner better would be if we had some salad, but I always have to forget something.

Loaded Baked Potato Soup
This happens to be one of KS's favorite soups that I make. It is super easy and only takes about 10 minutes total to make since you are just dicing up a few things and throwing it all in a crock pot to cook throughout the day. Once its finished your house will smell delicious!
potatoes
1/2 cup chopped onion
1/4 cup butter (I omitted the butter)
2-3 tsp flour
1/2 tsp salt, pepper, & garlic powder
1/2 pkg real bacon pieces (I used whole packet and I also bought the larger packet)
8oz Monterrey & cheddar cheese ( I used close to 3 cups, If you use a lot of cheddar cheese don't add the extra salt, it tends to get pretty salty.)
14 oz chicken broth (I used 32oz)
1pt heavy cream
1 bunch chives
sour cream
I also added water since we eat so much of the soup in one serving.
enjoy!
I used about 2.5lbs of potatoes and I left the skin on them since we enjoy it. Just dice them up and throw it all in the crock pot all day on low or on high for a few hours and then low if you are starting it later in the afternoon. I also use my immersion blender for a couple of seconds once it is done cooking to make it a little thicker.

Once again a totally random weekend post.
* Fixing to celebrate Kiale's 7th and Cayleigh-Grace's 2nd birthday with a party and a BBQ in a few hours
*All the guys graduate this week
*Only 2 more weekends here before we PCS out
*will be seeing my family in about a month!!

*KS got a leave extension so we all get to leave together instead of just the kids and I.

Recipe of the Week: Tuna Cakes

I have decided to try a new recipe each week to try and get my family out of the "same old same old" rut that we are currently in. So this week we tried Tuna Cakes, so far they are a hit the boys and I loved them... Big Kiale hasn't tried them yet he isn't feeling well and was napping while we were having dinner, but he is going to try them in a little while. I actually had these for the first time at Katie's house and loved them and decided that we had to try them as a family. I got 9 cakes out of the recipe. Did I mention that I didn't tell them what they were eating until they finished it... hehehe

6 servings
What You Need
2 cans (6 oz. each) light tuna in water, drained, flaked
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup KRAFT Shredded Mild Cheddar Cheese
3/4 cup water
1 carrot, shredded
1/3 cup KRAFT Real Mayo Mayonnaise
2 Tbsp. CLAUSSEN Sweet Pickle Relish
Make It
MIX all ingredients. Refrigerate 10 min.
HEAT large nonstick skillet sprayed with cooking spray on medium heat. Use ice cream scoop to add 1/3-cup portions of tuna mixture, in batches, to skillet.
FLATTEN into patties with back of spatula. Cook 6 min. or until golden brown on both sides, carefully turning patties over after 3 min.
